  1. Take 200 g thin beef steak
  2. Prepare 2 pak choi
  3. Prepare 2.5 cm fresh ginger

Ginger and beef is one of my favourite flavour pairings. Here I've used it to create this healthy spin on takeaway crispy beef. The crunchy pak choi adds freshness, while the pickled radishes. Pak choi gets simmered in a flavoursome broth of chicken stock, ginger and garlic and topped with shredded miso and gochujang chicken to make this hearty soup.

Instructions to make Beef with Pak Choi and Ginger:
  1. Separate and wash the Pak Choi removing any dirt.
  2. Peel ginger and slice into fine strips (julienne)
  3. Slice beef into thin strips (these will cook quickly and will be tender). Drizzle with a little vegetable oil.
  4. Add beef to a hot frying pan. Keep stirring for 2 to 3 minutes.
  5. Add ginger to the pan, cooking for 1 more minute.
  6. Add a generous splash of soy sauce to the pan and the Pak Choi, stirring for 2 more minutes. They should be wilted but not too floppy!
  7. Serve with fluffy rice.
