- In a kadhai first add 2 tablespoon oil in that add whole cumin, bay leaf, ginger garlic paste, chopped onion. Saute for few minutes then add red chilli powder, coriander powder, salt, turmeric powder and cook it until raw flavour is gone. Now divide this mixture in two parts. Keep one part in kadhai and in another part add fried peanuts and biscuit or bread crumbs immediately then mix well and keep aside.
- In another part remaining in kadhai add chopped potatoes saute abit, add water, cover and cook until potatoes are boiled enough. Then add garam masala powder cook little more, add chopped coriander leaves and switch off the flame.
- Now in a bowl add wheat flour, along with 1 teaspoon oil, salt, mix well, add water little by little and make a semi soft paratha dough. Now rest the dough 20 mins then divide in parts depending on how many you are making with this.
- In bread crumb mixture made previously add 2 eggs, mix and keep aside.
- Meanwhile roll the dough balls in thin sheet.
- Now place 1 tablespoon of crumb and egg mixture in middle of the sheet, spread with spoon and cover from all other parts by making an envelope like shape.
- And time to fry the parathas. You can deep fry also I have shallow fried the parathas in medium flame for 5-7 mins.
- Parathas are ready to be served. Serve with potato curry, salad and sauce of your choice.
