- Heat a large wok or frying pan over a medium heat. Add the oil, then the onions, cooking until soft. Stir in the okra and chickpeas. Add the tomatoes and chilli, then season. Okra releases a sticky substance when cooked, but keep cooking, stirring gently – this will disappear and the tomatoes will become pulpy, about in 10 mins.

I wasn't WOWed by this recipe. I added onion and garlic and more spices to it to amp it up. Okra, called bhindi in Hindi (or lady fingers in Indian English, which has to be the cutest name for them!), has to be one of the oddest vegetables.
