Steps to make Cauliflower dry curry:
- Wash and soak dal. Cut and clean cauliflower florets. Soak in salt water for few minutes. Semi cook the florets with little salt and set aside.
- Pressure cook dal with little water until half done.
- In a wok, heat oil, add mustard and cumin seeds. Let them splutter. Add onions diced thick, green chillies, and curry leaves. When the onions are slightly brown, add turmeric powder and semi cooked cauliflower. Turn gently with a wooden spatula so as not to mash the vegetable.
- After few minutes, add semi cooked dal and add the remaining salt to taste. Stir gently. Let the whole curry cook for 5 - 7 minutes on a sim flame until dry. Remove to serving dish and garnish with coriander leaves.
- Can be served with rice or roti.
